Rockin's Baja Lobster Makes Its Way To The Strip

Five Restaurants to be developed in Clark County Las Vegas, NV, - Rockin’ Baja Lobster, the San Diego Based chain of Baja Mexico-style cantinas recently signed a multi unit franchise deal with Las Vegas native David Borchers to build five Rockin’ Baja Lobster restaurants throughout Clark County. Borchers, a seasoned entrepreneur and experienced restaurateur, plans to open his first restaurant in Las Vegas by January of 2007. “When I was looking into franchises I knew that I wanted more than just a bar concept,” says Borchers. “Rockin’ Baja Lobster had that. All menu items come with bottomless Caesar salad, rice and beans and all the fresh hot tortillas and salsa customers can eat. About Rockin’ Baja Lobster Rockin’ Baja Lobster was created from a family’s love of Puerto Nuevo lobster dinners. Joe DiRienzo converted his general grocery store into the first Baja style restaurant and his son Rick DiRienzo has since expanded it to six locations. Restaurants are typically 5,000 – 6,000 square feet, seat approximately 250 guests including the bar and check averages are $22.00.
