Well, we strongly believe Beach Bagels' bagels are so delicious because we make them the traditional way; kettle boiled first, then baked.
A more modern method practiced by some bakeries is to inject steam into the oven during the baking process in an attempt to replicate the boiling step. The steam oven allows for the simultaneous baking of hundreds of bagels but the steam does not set the crust the same way boiling does. This method produces a softer, puffier bagel. We affectionately call them, "bread with a hole in it!"
At Beach Bagels, we first kettle boil then bake the bagels- about 15 at a time- in a large kettle. This step effectively sets the crust. Then into the oven they go. Once in the oven, the interior does not rise as much since the crust is already set. This labor intensive process results in the dense, chewy interior characteristic of a true bagel.
